This marshmallow creation not only looks good. It tastes great and is suitable as a cute festive gift!
The bears are made of coffee cinnamon vanilla marshmallows with no additional colouring added for the bear. The present is cinnamon vanilla coated chocolate hazelnut cake.
I have online and studio class versions for this. All studio participants get to have access to online class material at no extra charge. This is my first online/studio class introducing meringue powder as egg white replacement for my marshmallow class so some of you may be interested to know. I show you how to adjust the consistency of the marshmallow batter for different applications as well as how to create marshmallow coated cake.

This was a last minute decision but I am glad we made it! I am supposed to teach the Chinese New Year themed macaron teacups with an auspicious Chinese character "吉" on it in a week's time. But because the class looks set to be small and there was interest in an online class for macaron teacups, we decided to do a video of the physical class to create an online class.
Most of my followers on Instagram and people from the macaron Facebook group aren't Chinese so I thought something that is more Valentine's Day themed might be more suitable. So it was a last minute decision to include a bonus design for transforming the red macaron teacups into one suitable for Valentine's Day.
Instead of giving your loved one a bouquet of flowers, why not give edible bouquets in macaron teacups instead!
As a friend rightly pointed out, this is suitable for Mother's Day as well! I decided to keep this bonus design simple with simple hearts as teacup decorations, and simple rosettes and leaves piped using buttercream. If you have a mini Russian tip for piping roses, those will work great too!
In this class, I will demo how to decorate the teacups with hearts, and pipe the buttercream bouquet, in addition to showing how to make the Chinese New Year teacups below.

I am finally starting online classes! I had been hesitant to do so even after so many calls for it over the past couple of years because of the logistics involved. I really don't like having to deal with administrative stuff 😜. I am grateful that ArtZ Baking and Culinary studio is able to host my online classes and help with the logistics so we are going ahead with this!
I have advertised both of my debut online classes for macarons and choux pastries on my Facebook and Instagram accounts but thought I would mention it here on the blog as well. I have decided not to do up a blog post for the macaron online class as the design is the same as the one I conducted in 2018. You may read about it in this Instagram post over here.
