Gold and Pink Minnie Themed Cookiepops

Now that I am busy with bakes for my Creative Baking: Macaron Basics photoshoot, I can finally slowly clear my backlog of blog posts that have been collecting dust as drafts 😂. Quite a few of the backlog posts are cookie bakes because these usually take a backseat compared to other more exciting bakes. Nonetheless, I would like to present the full scope of what I do when possible. I don't just bake macarons and cakes all the time 😅. The reason why all my junior chef classes are cookie classes (so far) is because they taste great! I have direct feedback from both parents and kids who attend my classes.

I made this Minnie Mouse themed cookiepops at the end of last year for a little girl's first birthday.


These are made using my all-time favourite brown sugar cookie recipe. Both cookie and royal icing recipe can be found here.

Do note that for cookie pops, I use wooden sticks as they are safe to go into the oven. I also cut out two 4mm thick cookie dough cutouts for each cookie pop and sandwich the stick between the two cutouts before baking.

Space Themed Brown Sugar Cookies

My friend requested for some space themed and Mickey and Minnie mouse cookies for her son's birthday.



This is a way overdue post that I couldn't find an opportunity to post earlier due to more pressing bakes to post first. I made a more "grown-up” version of the planets and sun for my elder kid's birthday end of last year. This cute version was actually made months before that 😅.

Minnie Mouse Ribbon Vanilla Macarons (Reduced Sugar Shell and Filling, Template Provided)

I have a request for Minnie Mouse themed macarons. So here are some sweet pink polka dot ribbon macarons :)



Due to copyright issues, I could only make something that is related to Minnie Mouse but generic.

A request was made to make the macarons less sweet so I used the reduced sugar macaron shell recipe and reduced sugar vanilla swiss meringue buttercream recipe to make these. I actually made these ribbons along with elephant macarons, and Elsa and Olaf macarons but will just type out the full recipe of the shell for your convenience.

Here's a template for ribbons that you may print out to fit an A4 sheet. Please acknowledge the source here if you use it as I have taken time and effort to make this.



Reduced sugar macaron shell recipe
Ingredients (makes about 45-50 macarons, 90-100 shells):
Mass
210g superfine almond meal
196g icing sugar
11g rice flour
4g cornflour
1/8 tsp salt
White and pink gel food colouring
83g egg whites

Italian meringue
78g egg whites
196g castor sugar
73g water
1/8 tsp cream of tartar (optional)

Steps:
1. Prepare ribbon template and baking sheet on baking tray.

2. Prepare mass. Sift almond, icing sugar, rice flour, cornflour and salt together. Add egg whites and mix well to form a thick paste. Scoop out about 2 tbs of mass and colour it white. Colour the remaining portion pink.

3. Prepare Italian meringue. Heat caster sugar and water in a small saucepan until 115°C without stirring. In the mean time, beat egg whites with cream of tartar until soft peaks at medium low speed. Reduce speed if temperature of syrup is not reached yet. When syrup is ready, remove from heat, turn mixer speed to high and slowly pour syrup into egg whites in a thin stream, avoiding the beaters. Continue beating at high speed for 10-15 minutes or until cool, stiff and glossy. Portion about 1 tbs of meringue to stick baking sheet to baking tray. Use the formula weight of meringue = 0.51 x weight of mass to portion out the meringue for white and pink colours.

4. Macaronage. Fold meringue into masses in two additions. First addition is about a third. Please refer to this post for video tutorials of macaron basics such as how to fold the batter. You may refer to my macaron book too. The batter is ready when it falls off the spatula in a slow moving lava-like manner.

5. Transfer pink batter into piping bag fitted with 6 mm round piping tip. Pipe the ribbon by tracing the shape. Use a toothpick to pull batter in place wherever necessary. Bang tray in table to remove trapped air bubbles. Transfer white batter into piping bag fitted with 2mm piping tip. Pipe the dots while the pink batter is still wet. Bang tray again.

6. Dry the shells in aircon room and/or under a fan for about 2-3 hours (reduced sugar recipe tends to take longer to dry) or until dry to touch. You may use the regular macaron shell recipe without sugar reduction of you don't wish to wait for too long.

Piping ribbons 

7. Bake in preheated oven at 140°C for 10 minutes at lowest rack. Rotate the tray and bake at 130°C for 8 minutes. If the feet appear wet, reduce temperature to 120°C for another 5 minutes and check again. Cool completely before removing from tray.

Freshly baked!

Decorate the shells with pink royal icing. Outlining the ribbon with royal icing gives it some definition.


Fill the shells with reduced sugar vanilla Swiss meringue buttercream and refrigerate for at least 24h before serving.

Mickey & Minnie Mouse Sugar Cookiepops

I have a request for Mickey and Minnie mouse sugar cookiepops and here they are!


I usually use shortbread to make this pair of mice as I like to use natural colouring (charcoal and strawberry paste) and make the cookies relatively icing-free. Since the requester wanted it in sugar cookie form with iced features and mounted on sticks, I made it differently from my preferred style.

The recipe for sugar cookie is adapted from the rolled cutout butter cookie dough in "Crazy about cookies" by Krystina Castella that I bought recently. I couldn't resist buying this book because there are so many wonderful recipes and creative ideas in this book! I would have chosen my good ol' brown sugar cookie recipe that my recipients rave about but the reference picture I was given was of a regular sugar cookie base. Doing things differently this time meant that I get to challenge myself and learn something new :).

Ingredients (makes about 36 Mickey/Minnie cookiepops):
227g unsalted butter, softened
225g caster sugar
1 large egg yolk
1 large egg
1/2 + 1/8 tsp salt
2 tsp vanilla extract
438g plain flour

Steps:
1. Cream butter and sugar until pale and fluffy. I was feeling really tired and for the first time, I used an electric mixer to do the creaming *gasp*. I usually get a good workout creaming by hand.

2. Gradually add in lightly beaten egg and egg yolk, mixing well with each addition. The mixture will separate if you add too much egg at once. Add in vanilla extract and mix until well combined.

3. Add sifted flour and salt in a few additions, mixing the flour in with a spatula until just combined.

4. Chill the dough in fridge for 30 minutes before dividing into 3 portions and rolling them to 1/4" thick between 2 baking sheets. It's easier to work with 3 smaller batches of dough than one large portion of dough.

5. Chill the rolled dough in fridge or freezer until firm. At least 30 minutes.

6. Prepare a Mickey head outline template on paper with the head the same size as a 5cm diameter round cookie cutter. The ears are cut from round cutter slightly smaller than 3cm. Place a small piece of baking sheet over template and cut out the Mickey shape as shown below. Carefully insert a wooden stick into the head. Place the whole assembly, including the baking sheet, onto a baking tray. Remember to lightly press the dough at the boundary of the ears and head such that the dough sticks together. I used a reusable freezer pack as my work surface to keep the dough chilled for a longer time. Dust with a bit of plain flour if the dough is sticky.



7. Preheat oven to 170°C. Chill the tray of cutouts in the freezer/fridge until firm (at least 15 minutes). Bake at 170°C for 13-15 minutes or until edges are lightly browned. Cool on tray for 5-10minutes before transferring to cooling rack to cool.


8. Decorate with royal icing when completely cooled. It is advisable to let the cookies rest overnight before icing but I was in a hurry to finish so I started to do part of the icing on the same day that I baked the cookies. I used cocoa powder and charcoal to colour black, and strawberry paste with a bit of red and burgundy gel food colouring to colour red. The result is a fragrant cookie with Neapolitan flavour :). Vanilla cookie base and chocolate - strawberry icing.



Be sure to let the base icing dry completely before adding on the white dots and bows! I dried mine overnight before adding the bows and dots.


I secured the stick with some royal icing at the back of the cookie as I had difficulty inserting the sticks until the dough completely covers them. You may make two thin round cutouts for the head to sandwich the wooden stick like I used to do for my previous cookiepops but I was trying out this faster method of inserting the stick into the side of the dough cutout for this bake.

Individually wrapped with red ribbons was requested...

Minnie Mouse 2-Tier Strawberry-Vanilla Chiffon Cake


This is a sweet 2-tier Minnie Mouse Chiffon Cake that is strawberry-vanilla flavoured for baby Rainie’s full month celebration! It’s somewhat a big sister version of my previous Minnie Mouse Strawberry Chiffon Cake. Here, I added a vanilla chiffon cake tier on top decorated with pink polka dots. I also felt more confident to tie a bow using chiffon cake for her hair compared to last time. I'm a little late in blogging this cake to wish the baby full month :p. Hope she is growing well! Thankful cake was well-received.

Minnie Mouse-themed Chiffon Cupcake


This is a sweet, simple and healthy pink Minnie Mouse-inspired chiffon cupcake I made for my daughter's 1st birthday (for the cousins)! The black is colored naturally with charcoal powder, and the pink is colored naturally with pink beetroot-based powder. I have to thank Phay Shing for sourcing such an awesome source of pinkish beetroot powder (Queen brand) from Cold Storage in Malaysia.

Instead of baking the two colours in, like in Hatching Chicks chiffon cupcakes, I took a different approach and painted a cream-colored vanilla chiffon cupcake into black and pink. Then I glued on the candy pearls (from Phoon Huat) and small round patches of vanilla chiffon (cut out from layer chiffon cake) with melted marshmallows.

Vanilla chiffon cake (makes 4 cupcakes in 11mm Iwaki round glass bowls and 1 6-inch layer cake)
3 egg yolks
20g sugar
40g vegetable oil
40 ml boiled water
5 ml vanilla extract
60g cake flour

4 egg whites
45g sugar
1/4 tsp cream of tartar

1. Preheat oven to 160°C.
2. Beat egg yolks with sugar with whisk till pale yellow before stirring in oil, water and vanilla extract.
3. Next add in sieved flour and whisk till no trace of flour found.
4. Meringue: Beat the egg whites with ¼ tsp cream of tartar till stiff peak, mixing in caster sugar in 2 additions.
6. Fold in the meringue gently into the batter in 3 additions.
7. Scoop and fill the bowls with chiffon cake batter to 2/3 full and gently tap bowls on table to remove air bubbles. Pour the rest of the batter into a baking paper-lined 6-inch tray.
8. Bake the bowls for 15 min at 160°C then 17 min at 150°C, and the tray cake for for 15 min at 160°C.
9. Place bowls on a cooling rack to cool and then unmould by hand when cool. Flip over the tray cake onto a fresh baking paper.
10. Prepare charcoal powder in boiled water (approx 1 tsp in 1/4 cup water) and pink beetroot powder in boiled water (approx 1/2 tsp in 1/4 cup water, to desired colour) and paint each half black and pink respectively. I found it easier to paint pink first, followed by black so that I only need to be careful when painting the black outline.
11. From the 6-inch tray cake, cut out 2 bigger circles for ears (paint them black), a bow (paint them pink) and small circles (using a bubble tea straw, leave unpainted). Melt some marshmallows with a little bit of water (double boiler or microwave) and glue them onto the Minnie Mouse cupcake.

Have fun painting! The cupcake was a hit with the kids!

Minnie Mouse Chiffon Cake (my baby's 1st birthday)!


My dear little Charissa is turning 1 year old today! Time flies and can't believe my baby is growing up. The Minnie Mouse theme was suggested by my elder daughter Tintin as Charissa looks a little like the baby Minnie Mouse hee. The chiffon cake is made of charcoal and plain vanilla chiffon cake that is steam baked which gives it an ogura-like cottony quality. I find that steam baking really helps with the texture when not baking chiffon cakes in tube pans. The facial features and bow were cut and shaped from chiffon cake baked as layers in trays. That's her with her Minnie Mouse cake. The cake and balloon look big beside her!


May you continue to bring so much joy and grow up to be full of grace. Happy 1st Birthday Charissa!!

Mickey & Minnie Cookies and Cream Macarons (updated version)

Someone requested for some Mickey and Minnie mouse macarons with cookies and cream as the flavour. But this time, Minnie is dressed in pink and adorned with more polka dots!


I made some slight modifications to the recipe for the shells and filling from my first attempt. I increased the amount of charcoal and cocoa to make use of more natural colouring and flavour. The addition of vanilla bean paste is to enhance the flavour too! Many thanks to Susanne for this gift otherwise I will not have vanilla bean paste in my possession. I have to confess that I had to junk my batch of French buttercream (buttercream that uses egg yolks like in my previous Mickey macs attempt. I tried a different French buttercream recipe.) Much as it is nice to be able to use up all that excess egg yolks from making macaron shells, French buttercream is just a little too tricky for me. The cream separated and I couldn't salvage it so it's back to good old foolproof swiss meringue buttercream!

Beside a change in recipe, I used a mix of oven drying and aircon drying of the shells to get the optimal drying time for fit my routine as aircon drying takes way too long and oven drying tends to result in shells that are too dry. Since I have 5 trays to dry, I can't dry them in the oven all at once. By the time the last tray of shells are dry, the first tray would have been sitting out for quite a while. My panda and Peppa Pig macarons have feet that are not as beautiful due to this reason. Check out the feet from this batch of macs!


Please refer to my previous macaron shell recipe for the detailed steps. I will highlight the changes here.

Macaron shells
Ingredients:
200g almond powder/meal (preferably superfine)
200g icing sugar
2 tsp cocoa powder
15g charcoal powder
1/2 tsp vanilla bean paste (optional)
Black gel food colouring
200g caster sugar
75ml water
160g egg whites, divide into two equal portions (preferably aged)

Prepare the mass and Italian meringue. As usual, be careful not to overfold the batter during macaronage.

Pipe batter onto baking sheet with template under.


I dried each tray of shells in the oven at 60°C fan mode for 10-15 minutes before aircon drying until it is time to bake. Total drying time for each tray is about an hour. If you can fit all your trays in the oven, by all means oven dry them in one round and just ramp up the oven temperature when they are dry.


Royal icing
Ingredients:
126g icing sugar
9g meringue powder
24g water
Gel food colouring

Pardon me for not using more natural colouring this time :p. I am really busy and needed to speed things up by making the icing in one batch. I have found the optimal whisking time for royal icing, which is around 5-6 minutes of continuous hand whisking. You may use the electric mixer if you don't like the hand exercise. Do adjust the consistency by adding more water or icing sugar. Any peaks in the icing should disappear in 10 seconds.

Freshly iced!

Cookies and cream smbc
Ingredients:
250g smbc
70g crushed Oreo cookies (cream removed)

(I actually used 268g of smbc and 80g of crushed oreos because that was a convenient proportion for me)

Please refer to this recipe for the basic smbc. Just omit the Horlicks and water in the recipe. Beat in crushed oreos until well combined. Transfer to piping/ziplock bag and pipe the filling onto the bottom shells. Place the top shell on and refrigerate until it is time to serve. Keep the macs in airtight container. They can keep for a week plus in the fridge.



I have some extra batter (didn't use all up for these mice) which I made full use of to create two other designs of cute macarons. Check out my cute bumblebee and Badtz Maru macarons!

Minnie Mouse Strawberry Yoghurt Chiffon Cupcakes (& Heart Cakepops)

This is quite an intensive bake for me with 24 Minnie Mouse cupcakes, 30 heart cakepops, 15 Mickey and 15 Minnie cookies in one order! Thank God I managed to pull it off with His help!...including all that individual packaging for the cookies and cakepops!

A horde of mice! 

You may refer to my old post on how to make the Mickey and Minnie mouse shortbread cookies.

I chose strawberry yoghurt as the cupcake flavour to impart the maximum fruitiness of fresh strawberries, and fragrance and moisture of yoghurt into the cakes. As usual, we use extra egg whites to give our cakes the signature soft and fluffy texture. I adapted the recipe from my strawberry yoghurt chiffon "strawberries."

Strawberry yoghurt chiffon cupcakes (makes about 27 small cupcakes)
Ingredients:
5 egg yolks
25g caster sugar
70g canola/ vegetable oil
41g strawberry puree
42g strawberry yoghurt
1/2 tsp strawberry paste
100g cake flour
1/8 tsp salt

7 egg whites
1/4 tsp cream of tartar
75g caster sugar

Steps:
1. Make the strawberry puree by blending fresh strawberries with a bit of boiled water. This can be made ahead of time and frozen.


2. Whisk egg yolks and sugar until pale and thick. Gradually add oil and whisk until consistency is like mayonnaise. Gradually add puree, yoghurt and strawberry paste and whisk until well combined. Gradually whisk in sifted flour and salt until no trace of flour is seen.

3. Beat egg whites with an electric mixer in a clean metal bowl with cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form.

4. Fold the meringue into egg yolk batter in three additions. You may wish to transfer the batter into a jumbo ziplock bag fitted with piping tip adapter to fill all the cupcake liners quickly if you don't have a batter dispenser.  Fill until the batter is about 1cm away from the rim.

5. Bake in preheated oven with tray at second lower rack at 160°C for 8 minutes and 140°C for another 9- 15 minutes or until skewer comes out clean.

Freshly baked!

You may wish to keep the cakes in air tight container/bag in the fridge to keep it fresh for up to a few days.


Heartpops/layer cakes (for decoration)
Ingredients:
1 egg yolk
15g caster sugar
40g canola oil
42g water
Flavouring and colouring (1/4 tsp vanilla extract or 1 tsp strawberry paste. Red gel colouring or charcoal powder)
Pinch of salt
60g cake flour

4 egg whites
1/6 tsp cream of tartar
40g caster sugar

Steps:
Same as the above except bake the layer cakes at 160°C for 8-10 minutes. I baked very thin layers to mimic fondant, thus the short baking time. These layer cakes can be baked in advance and frozen after wrapping it in double layers of cling wrap. To bake the heartpops, place the heart tray in preheated oven at 160°C then turn the temperature to 140°C immediately. Bake for 13-15 minutes or until skewer comes out clean. Carefully unmould the heartpops when completely cooled. You may wish to lightly grease the heart silicone ice cube tray mould to make it easier to unmould.

Looking sweet already!


Assemble the cupcakes by using cookie cutters to cut out the shapes and glue on using melted marshmellows. Brush the assembled cupcakes with simple syrup (1:1 ratio of sugar and water) to keep them moist as they will be out in the open for display at the party. Brush the heart cakepops with syrup too as they are very small and tend to dry out more easily.

Mickey and Minnie Mouse Shortbread Cookies (with minimal icing)

I have a request for some Mickey, Minnie and rainbow with clouds cookies so I thought it would be easier to use shortbread as the cookie base for all of them. So here's the couple but with Minnie dressed in pink :).


I made this pair using another butter-based recipe a couple of months ago, so this is my first attempt using shortbread dough to create Mickey and Minnie. Only the dots are made from royal icing. The rest of the cookie is shortbread so you don't end up eating too much sugar. Most decorated cookies you see have the whole cookie surface covered in icing.

I added cornflour to the recipe to give the cookies a softer bite but they are still nice and crunchy. Recipe is adapted from my rainbow with clouds shortbread cookies which makes use of a simple ratio of sugar:butter:flour that Guaishushu publicized in his blog. I try to use natural food colouring whenever I can.

Ingredients (makes 54 cookies, 27 pairs of Mickey and Minnie):
Black dough
104g icing sugar
208g unsalted butter, cut into small pieces
270g minus 2 tsp plain flour
42g corn flour (you may replace with plain flour)
3 tsp charcoal powder
1.5 tsp vanilla extract
Pinches of salt

Red/pink dough
26g icing sugar
52g unsalted butter
68g plain flour
10g corn flour
1/2 tsp strawberry paste
Red and pink gel food colouring

Royal icing
28g icing sugar
2g meringue powder
Warm water (added till flooding consistency is reached)

Steps:
1. Make the black dough. Sift together sugar, flours, charcoal powder and salt. Add unsalted butter into the flour mixture and rub in using finger tips until it resembles breadcrumbs. Knead to form a dough as you gradually add vanilla extract to the mixture.

2. Roll the dough between two baking sheets until 5-6mm thick. Refrigerate for half an hour or up to a few days. Just keep the dough cling wrapped or in ziplock bag for longer storage.

3. Make the red and pink dough. Same as step 1 and 2 except that you add strawberry essence instead of vanilla extract.  Divide the dough into two portions with the pink portion about 1.5x more than red dough. Colour the dough with gel food colouring. Roll the dough to thickness of 2-3mm.

4. Use Mickey mouse shaped cutters to cut the black dough and place on baking tray lined with baking sheet. Use a round cutter and a knife or bench scraper to cut the red/ pink semi circles. Stick the semi circles onto the black base. For Minnie mouse's bow, I used the smallest round cutter and heart shaped cutter that I have to create it. If the dough is too soft to handle, chill it in the fridge for 10 minutes before working on it. If the dough is too stiff and crumbly, let it sit out at room temperature for a few minutes first. I find it helpful to place the dough on top of reusable freezer packs as my work surface to keep the dough cool but pliable for a longer time, especially the thinner dough.


5. Preheat the oven to 160°C. Refrigerate the tray of assembled cookie dough for at least 15 minutes. Bake for 12-14 minutes until very slightly browned at the base. Be careful not to overbake or the colours will not appear vivid.

Freshly baked!

Let the cookies sit on the baking tray for 5 minutes before transferring to cooling rack to cool completely.

6. Prepare royal icing. Sift together icing sugar and meringue powder. Gradually add warm water and whisk for a few minutes until flooding consistency is reached (any peaks disappear in 20 seconds). Transfer to piping bag fitted with a small round tip (I used wilton #2 tip).

7. Pipe two buttons for Mickey and polka dots for Minnie. You may pipe a lot less dots for Minnie if you find it tedious to pipe so many like mine. Leave the icing to air dry or if you want to speed up the process like me, put the cookies back in the oven at 80°C fan mode for 15-20 minutes or until the icing is dry. Cool completely on cooling rack before storing in airtight container.

Minnie Mouse Strawberry Chiffon Cake


The last time I made a Minnie Mouse chiffon cake, my dear friend Fel remarked that Minnie Mouse will be more like Minnie if she was wearing pink instead of red LOL (pink is Fel's favorite color!). So I promised her my next Minnie Mouse will be wearing pink! :) I made this cake for a little girl who is very very sweet and so reminded me of the pink Minnie Mouse. This sweet cake is inspired by the sweet girl :). I changed the flavor to strawberry so that I could use strawberry puree and paste for the pinkish color. The head cake was colored black using charcoal powder. Recipe for the strawberry chiffon cake is as follows.

Strawberry Chiffon Cake (17 cm chiffon tin)
3 egg yolks
20g sugar
39g vegetable oil
44 ml strawberry puree
1.5 ml strawberry paste
60g cake flour
Dip of wilton pink coloring *optional

4 egg whites
45g sugar
1/4 tsp cream of tartar

1. Prepare strawberry puree. I was lazy to break out my blender so I used a grater and then strained the mixture to obtain the puree.


2. Preheat oven to 160°C (I used steam baking but it is optional).
3. Beat egg yolks with sugar with whisk till pale yellow before stirring in oil and strawberry puree.
4. Add in sieved flour and whisk till no trace of flour found. Whisk in strawberry paste and a dip of pink wilton coloring (optional).
5. Meringue: Beat the egg whites with ¼ tsp cream of tartar till stiff peak, mixing in caster sugar in 2 additions.
6. Fold the meringue into the batter 1/3 at a time and gently pour into the chiffon tin from a height. Gently tap tin on table 3x to remove air bubbles.
7. Bake the chiffon tin to 160°C for 15 min then at 140°C for 31 min.
8. Invert the chiffon tin once it removed from oven and leave to cool on a cooling rack.
9. Unmould the chiffon cake by hand. Gently pull the cake from the sides of the tin at each angle and push the removable base up to unmould the sides. To unmould the cake from the base, gently lift up the cake from the base using hands, repeating this at each angle before turning the base over.

The minnie mouse head and shoes were made from the same strawberry chiffon cake recipe, but with batter divided into black (charcoal powder) and pink in 2:1 ratio baked in a big round cake mold and 2 smaller bowls. They were fixed together using melted marshmallows.

I added in some pink marshmallows flowers into the hidden surprise so that it will be more fun to cut the cake (also inspired by the sweet girl)!


My friend shared that it was a very soft and yummy cake and looked really sweet ^_^.
