PJ Masks Strawberry Cream Cheese Macarons (new filling recipe!)

Besides requesting for PJ Mask themed macarons, I was asked to fill the macarons with something that is kiddy, not too sweet and not dark chocolate based. Here's my version of strawberry cream cheese macarons with a small dollop of homemade strawberry jam!


I used the reduced sugar recipe for the macaron shells here. Both regular and reduced sugar recipes can be found here. I decorated the shells with edible marker and royal icing.


Strawberry jam and cream cheese recipe
Ingredients (fills about 40 macarons):
Strawberry jam
30g strawberry puree
1 tsp lemon juice
15g caster sugar
A pinch of salt

Strawberry cream cheese
60g cream cheese (softened at room temperature)
30g unsalted butter (room temperature)
30g vanilla bean white chocolate*
1/2 tsp strawberry emulco/paste/emulsion
1/2 tsp vanilla extract
1/8 tsp salt

*You may use any brand of your favourite white chocolate for eating. I have discovered this a couple of months ago. Really yummy and easy to work with compared to couverture.

Steps:
1. Prepare strawberry puree by blending and sieving fresh strawberries.

2. Combine all ingredients for the jam in a small saucepan and cook over low heat until mixture thickens. Set aside to cool.

3. Beat softened butter and cream cheese together until pale and fluffy.

4. Melt white chocolate over double boiler or in microwave oven. Be careful not to overheat. Let the melted chocolate cool a little while stirring it to prevent it from solidifying.

5. Slowly pour the melted chocolate into the cream cheese mixture and mix well with electric mixer. Add salt and mix well. Don't panic if your mixture appears to separate. Chill the whole bowl in the freezer for a couple of minutes and beat again with the mixer. Repeat this until you get a nice homogeneous texture.

6. Add strawberry puree a tbs at a time beat with electric mixer.


7. Add strawberry emulsion and vanilla extract. Mix well again


Transfer cream cheese filling into piping bag and pipe onto the bottom shells. Add a bit of strawberry jam in the middle and sandwich with top shell. Store assembled shells in fridge for at least 24h before serving.

This filling is not too sweet, rich yet fluffy and slightly tart.

I am happy to find another less sweet macaron filling base other than my usual white chocolate ganache or Swiss meringue buttercream. You may pair the cream cheese base with other fruity, tea, caramel or chocolate flavours too!

PJ Masks Brown Sugar Cookies II

I was not too enthusiastic about making PJ Masks themed cookies again but when I was given the reference pictures by my friend, I did the job with much more enthusiasm because this version is a lot cuter :)

I made brown sugar cookies with simple mask designs earlier this year and you may see it here.

Those of you who have followed my blog posts will know that I make my own cookie templates. I use the same templates for cutting out the dough and for icing the cookies. You may refer to this blog post for making and using homemade templates. I also use the same cookie recipe over and over again because I have always received rave reviews for the taste. The darker brown spots on the dough is due to the type of brown sugar that I used, Masarang Arenga forest brown sugar.

A lower glycemic index sugar that tastes awesome and has vitamins and minerals!

These cookies can keep for 1.5-2 months so they serve very well as door gifts!

PJ Masks Brown Sugar Cookies

Sometimes I am a little hesitant to post seemingly simple looking bakes like this. But not to do so would not be representative of the repertoire I make. Presenting my PJ masks brown sugar cookies!


I have always used the same brown sugar cookie and royal icing recipes because the feedback is always awesome. Cookies are about the simplest type of bakes compared to chiffon cakes or macarons because they have a bigger margin for error don't need electric mixers. Checkout this post for the detailed recipe for the cookie and icing.

As usual, I made my own templates for cutting out the cookie dough and for decorating the cookies. Please refer to this post on how to make and use the homemade templates.

Icing the cookies!

Although the designs look simple, to ice them perfectly is not as easy as it looks because geometric shapes are less forgiving to errors made in precision. Overall I am satisfied that they look neat enough on the whole :p.
