Baymax Lychee Rose Chiffon Sponge & Pudding Cake (coloured with blue pea flower)

This is an overdue post but I had other more pressing posts to post first :p. My friend requested for a Baymax themed lychee rose sponge and pudding cake for her 4-year-old son :). This flavour is really popular! Keep a lookout for another lychee rose sponge and pudding cake that I made concurrently with this Baymax themed cake.

My friend is very kind to provide me with the cake toppers and a design for reference. It is particularly helpful during the period when I was in the midst of finishing up all the macarons for the Creative Baking: Macarons book photoshoot. This cityscape design with shooting stars is made out of chiffon layer cake, surrounded by a ring of canned lychees stuffed with lychee rose pudding. I used blue pea flowers to minimize the use of artificial colouring to colour the pudding. As the pudding is custard powder based, I can't make it entirely blue due to the yellow colouring already present in the custard powder. The result is more teal coloured.

Baymax in the city!

You may refer to this recipe for the sponge, pudding and stuffed lychees as the size is the same, 9". The only difference is I replaced 50g of water in the pudding with 50g of hot water to soak 1 tbs of blue pea flowers for half an hour. Be sure to squeeze out as much water as possible from the blue pea flowers to extract as much blue dye as possible. As natural colouring tends to be dull and mild, I still had to add about 1/3 tsp of liquid blue food colouring. I use liquid food colouring to colour the pudding as I find it more even and smooth than using gel.

Use a toothpick to secure each lychee to the cake to prevent them from rolling around during transport.

I baked some black, red, yellow and white reduced-yolk vanilla layer cakes in two 25x30cm trays to create the cityscape and wordings. As the shapes are simple, I used cookie cutters and a fruit knife to cut out the shapes. No complicated carving was required. No marshmellow glue is required to stick the decorations onto the pudding as they will stick naturally :). I only had to use melted marshmellows to stick on the windows of the buildings and the stars to the silver wire tie. Use some lychee syrup from the can to brush onto the small cake cutouts to keep them moist.

Here's the ingredient list for the layer cakes:
1 egg yolk
10g caster sugar
36g canola/vegetable oil
36g water
1/4 tsp vanilla extract
1/4 tsp lychee flavouring (optional)
60g cake flour
Pinch of salt
1/2 tsp charcoal powder
1/16 tsp red yeast powder
1/2 tsp Queen's yellow natural powder colouring
White, yellow and red gel food colouring

4 egg whites
40g caster sugar
1/4 tsp cream of tartar

You may refer to the steps found in the link above for making chiffon sponge. Divide egg yolk batter and meringue into ratio of 3:1:1:1 for black:red:yellow:white.

Bake for 10 minutes or until skewer comes out clean.

Thank God the cake was very well received by her family as the cake was not too sweet. Her nephew who doesn't like cakes with cream loved the pudding :).

Hiro Raspberry White Chocolate Macarons (Tsum Tsum series part 5)

This is the last in the series of Tsum Tsum macaron bake! Finally! Here are some Hiro macarons with raspberry white chocolate filling amongst the rest of my Tsum Tsum bakes!




These macarons do not need refrigeration.

You may refer to this recipe for the basic batter and steps, and my newly made macaron video tutorials just in case you need more visuals :).  Just some points to note...

Use a Wilton #12 tip to pipe on the purple shell. Use a Wilton #3 tip to pipe on the thin purple part. Bang the tray on table before resting for 15 minutes. Pipe in the beige part with a Wilton #10 tip. Bang tray on table before drying the shells for 1-2h in air-con room or until dry to touch.

Bake at 130-140°C for 17-20minutes, rotating the tray halfway through baking. Bake at 120°C for 5 minutes more if still not dry and check again.

Here's the whole collection of the macarons I made in a batch! Well... Almost. There's still an extra Rilakkuma, a few bears and basic shapes not included in the picture. I froze the bear shells for future work. Otherwise it's too much work for me in a single sitting!

Baymax and Baby Chiffon Cupcakes (Vanilla-chocolate)


This cute Baymax and baby was a simple bake for the family celebration of my bil and daughter (who loves Baymax) who were turning 40 and 4! Hence the giant and small cupcake for each of them :p. The cupcake is made from reduced egg yolk vanilla chiffon cupcake, with eyes and features made from chocolate chiffon cake (because my nephew likes chocolate!). I was trying out the extra dark cocoa powder (Bakeway) I bought from Phoon huat. It does darken the shade very much naturally while being yummy!

Reduced egg yolk vanilla chiffon with chocolate chiffon cake eyes
1 egg yolk
20g sugar
39g corn/vegetable oil
42 ml water
5 ml vanilla extract
60g cake flour
Cocoa powder (extra dark)
Charcoal powder

Meringue:
4 egg whites
45g sugar
1/4 tsp cream of tartar

1. Preheat oven to 160°C.
2. Beat egg yolks with sugar with whisk till pale yellow before stirring in oil, water and vanilla extract.
3. Add in sieved flour and whisk till no trace of flour found.
4. Scoop out 10 tsp batter and add 1 tsp cocoa powder (extra dark) and ¼ tsp charcoal powder. Mix well.
5. Meringue: Beat the egg whites with ¼ tsp cream of tartar till stiff peak, mixing in caster sugar in 2 additions.
6. Scoop over 20 tbsp meringue and gently fold into the chocolate batter in 2 additions.
7. Fold in the rest of the meringue gently into the plain batter 1/3 at a time.
8. Pour the batter into a wilton ball cake pan (for the giant cupcake) and a 11 mm Iwaki glass bowl (for the small cupcake) till ¾ full. Gently tap the bowls to remove air bubbles from the batter.
9. Bake the giant cupcake at 160°C for 15 min then 140°C for 20-25 min (or until skewer comes clean). Bake the small cupcake at 160°C for 15 min then 140°C for 15 min.
10. Pour the chocolate chiffon batter into a 9-inch tray and bake at 160°C for 14 min.
11. For the ball cake pan and bowl, invert once out of the oven to cool and leave to cool on the cooling rack. *If the batter rises above the top, wait for the cake to shrink a bit till below the top then invert.
12. For the chocolate chiffon layer, flip the cake over to a new baking sheet once out of the oven and cover with another baking sheet to cool.
13. Unmould cupcakes by hand after the cakes are cool. Gently pull the cake from the sides of the bowl and then flip it over onto a plate/cake board.
14. Assembly: Cut circles using a circular cutter (1.5 cm diameter) and bubble tea straw respectively for the giant and small cupcake. Cut strips using a sharp knife. Melt some marshmallows with some water and apply it to the undersides of the chocolate chiffon to stick them onto the cupcakes.

There you go! Baymax and baby chiffon cupcakes! The kids had fun blowing out the many candles and the chiffon cupcakes were well-received in terms of taste and texture!

Baymax Oreo Cookies Chiffon Cupcakes

I have a request for Baymax chiffon cupcakes for Susanne's friend. She sent a photo of an example of what she would like. Since the design requested was a simple one, I focused on making the cupcakes an awesome one :). Not that I don't give my best for every bake, but I took the liberty of choosing a more interesting cake flavour (not the usual ones you find on our blog) and took pains to make the cakes yummy.

Here are my really soft and fluffy oreo cookies chiffon cupcakes topped with Baymax's face!

Reduced-egg yolk recipe was used for the white layer and charcoal was used to colour the black layer cake. Both layers are vanilla flavoured.

Some of the good stuff that went into the cakes include Hokkaido milk...


...and a good brand of vanilla bean paste for better flavour.


Recipe for oreo cookies chiffon cake is adapted from Mandy's baking journey. I used high quality ingredients to make sure that it's really yummy, used a lower flour:liquid ratio and steam baking to make the cake softer and more moist.

Ingredients (makes about thirty-two 44x35mm cupcakes:
6 egg yolks
30g caster sugar
84g canola/vegetable oil
84g milk (I used Hokkaido milk)
1 tsp vanilla bean paste (or vanilla extract)
120g cake flour
1 tsp baking powder
Pinches of salt
5 oreo cookies coarsely crushed, discard filling (went into my kids' tummies :p as reward for helping me to crush cookies. You may add one more cookie if you like.)

8 egg whites*
80g caster sugar
1/2 tsp cream of tartar

* I divided the meringue ingredients into two as I baked the cupcakes in two rounds.

Steps:
1. Prepare a baking tray of water at the base of the oven (Optional. Baking time will be shorter by about 5 minutes without steam). Set oven rack to second lowest position. Preheat oven to 140°C. I used an oven thermometer. The dial setting was at 180°C but actual temperature reads 140°C due to the steam.

2. Prepare the egg yolk batter. Beat egg yolks and sugar until pale and thick. Gradually add oil and whisk until well combined. Gradually add in milk and vanilla bean paste/extract and mix well. Gradually whisk in sifted flour, salt and baking powder until no trace of flour is seen. Add crushed oreos and fold in using the whisk.

2. Prepare meringue. Beat egg whites in a clean metal bowl until foamy. Add cream of tartar and beat until stiff peaks form, gradually adding sugar while beating.

3. Fold the meringue into the egg yolk batter in 3 additions quickly but gently.

4. Fill the cupcake cases until almost full. Tap the tray of cupcakes on the table.


5. Bake 140°C for 25-28 minutes or until skewer comes out clean.

Freshly baked and cooled.


All packed! I made 29 of these.

I made some extra cupcakes for my kids to enjoy and share with friends and grandma :). They all loved it! Even my elder kid who is not a fan of cakes was happy to have more than one helping :).

Baymax-inspired Chiffon Cake with personalised Healthcare chip



Happy birthday to Kinley and to Singapore!

Today is the happy occasion of our country’s 50th birthday and a dear friend’s son’s birthday! I was inspired to transform the whole chiffon cake into this cute, fluffy version of Baymax (vs the sitting one I made previously) by the Mickey cake I made for her last year. It was one of the first few cakes I made so it’s rather nostalgic. Back to the Baymax, this whole Baymax uses 16 eggs! I scaled up the Reduced egg yolk vanilla chiffon cake recipe to 2 egg yolks and 16 egg whites (12 egg recipe) and divided it up among an 8-inch chiffon tin (6 eggs), ball cake pan (2 eggs), 2 round bowls (2 eggs) and 2 oval bowls (2 eggs). In addition I made a cute personalised Healthcare chip for him using pandan chiffon layer cake. Very thankful it was well-received!

Baymax is coincidentally white and red (the other version) so very Singapore in colors LOL! So it felt very apt to post today hehe. Very thankful to be in this country! =)

Baymax Chiffon Cake (Reduced Egg yolk Vanilla Chiffon)


"Hello. I am Baymax, your personal healthcare companion."

Ahh this is my favourite character from Big Hero 6 (apart from Hiro)! He’s such an endearing robot with a huggable image and silly classic quotes like "Fist bump, is not in my fighting database" and "Excuse me while I let out some air." LOL

Back to the cake, when I saw Baymax, I immediately thought his head is shaped like an egg. Yes you guess it! I baked chiffon cake in an eggshell for his head (refer to this post for preparation). Remember to remove the membrane cleanly from the insides of the egg, and poke the hole at the middle instead of the edges of the egg so that the edges are prettier. Baymax had a huge body and ballonish arms and legs, so the body and limbs are made from chiffon cake baked in oval glass bowls with swissrolls arms (with some carving to get the shapes and fingers). I used a Reduced Egg yolk Vanilla chiffon cake recipe (halved the recipe) for Baymax.

The base cake uses also the same recipe for a 9-inch chiffon tin. Baymax’s red suitcase was requested, so I baked an additional 8-inch 1 egg yolk Strawberry chiffon cake in layer tray for cutting the rectangles out.
