Giant ‘Ice Cream’ Chiffon Cake (Giant Cupcake)


I made this cute Giant ‘Ice Cream’ entirely from chiffon sponge some time back for a little boy! It's like a Giant Cupcake from chiffon cake. Can you guess how I made it? Yes, it's made by joining a hemispherical Strawberry Yoghurt chiffon with a Vanilla Chocolate chiffon cake base!

Strawberry Yoghurt Chiffon Cake (ball cake pan, also can be used for normal 6-inch tube pan)

2 egg yolk
12g castor sugar
25g vegetable/corn oil
32g strawberry yoghurt drink
3g vanilla extract
1/3 tsp strawberry paste/emulco
38g Prima cake flour, sifted
A pinch of salt

Meringue
3 egg whites
1/4 tsp cream of tartar
27g castor sugar

1. Preheat oven to 160°C.
2. Beat egg yolks with sugar with whisk till pale and light before stirring in oil, strawberry yoghurt drink and vanilla extract.
3. Add in sieved flour and whisk till no trace of flour found.
4. Meringue: Beat the egg whites with ¼ tsp cream of tartar till firm peaks, mixing in caster sugar in 2 additions.
5. Fold in the meringue gently into the batter 1/3 at a time.
6. Pour the batter into the ball cake pan and gently tap the pan on table to remove air bubbles
7. Bake the cake for 15 min at 160°C then at 140°C for 25+ min, or until skewer comes out clean.
8. Invert immediately once out of the oven and leave to cool on cooling rack.
9. Unmould the chiffon cake by hand (‘Hand Unmoulding Chiffon Cake for a Clean Finishing’ video tutorial).

Chocolate Chiffon Cake (6-inch Unopan tube pan)
2 egg yolks
14g castor sugar
26g vegetable/corn oil
29g water
5 g vanilla extract
30g Prima cake flour
10g cocoa powder (alkalized)
¼ tsp baking powder

3 egg whites
30g sugar
1/4 tsp cream of tartar

1. Preheat oven to 160°C.
2. Beat egg yolks with sugar with whisk till pale yellow before stirring in oil, water and vanilla extract.
3. Add in sieved flour, cocoa and baking powder and whisk till no trace of flour found.
4. Meringue: Beat the egg whites with ¼ tsp cream of tartar till firm peaks, mixing in caster sugar in 2 additions.
5. Fold in the meringue gently into the batter 1/3 at a time.
6. Scoop the batter into the chiffon pan and gently tap the pan on table to remove air bubbles
7. Bake the cake for 15 min at 160°C then at 140°C for 25+ min, or until skewer comes out clean.
8. Invert immediately once out of the oven and leave to cool on cooling rack.
9. Unmould the chiffon cake by hand (‘Hand Unmoulding Chiffon Cake for a Clean Finishing’ video tutorial).
10. Make cuts at the side.

Fill the inside of the tube hole with a hidden surprise to support the hemispherical chiffon cake above. Join the two using melted marshmallows. Other details were cut out from sheet cakes and glued on similarly but you can also piped them on with melted chocolate. I made the strawberry from cake pop mold.

Pink Turtle Seawaves Chiffon Cake (Vanilla-Pandan with Blue pea flowers)


This very sweet-looking chiffon cake was made for my mummy friend's lovely daughter Victoria!

This is my 4th chiffon turtle cake! I made it for a close friend last year, and for my nephew, and the cake ended up in my 2nd chiffon cookbook Deco Chiffon Cakes, and even made the book cover! Something about the big adorable goggly eyes I think!

This will be a short post, as I have shared the full recipe in Deco Chiffon Cakes (below), including picture tutorials on how to pipe and bake the 3D turtle.



Here, I was happy to make a pink turtle finally as it was the original cartoon version I had envisioned (and pink is my favorite colour! =p).

Just for fun, I took a video of the seawaves cake spinning. Warning: may cause sea sickness =p

Pink Ombre Stripes Heart Chiffon Cake & Cake pops (Vanilla-Strawberry)


I made this Pink Ombre Stripes Heart Chiffon Cake for my dear friend who wanted to give her fiancée an early Valentine’s day surprise, as they are getting married next week on Valentine’s day! I am so happy for them! I hope that this Valentine’s day gift will be a very special memory for them. 

The two hearts interlocking design was also specially designed for the love birds. The chiffon cake is dual-flavoured, starting from vanilla (cream-colour) and ending with strawberry on the other end (pink-red). I used the tube hole to hide some sweets in the cake for a hidden surprise!



Thank God the cake was very well-received!


I’ve previously made a Rainbow tiedye hearts chiffon cake (rainbow version of cake), and it's now in my second chiffon cookbook, Deco Chiffon Cakes.



I used a heart chiffon tube pan I got from TSB (The Story Begins). It's so pretty isn't it? The chiffon cake pan I used is 17-cm heart Cakeland pan. It can also be found on rakuten.



Pink Ombre Tiedye Heart Vanilla/Strawberry Chiffon Cake/Cake pops
5 egg yolks
33g sugar
66g vegetable oil
71g water
10g vanilla extract
100g Prima cake flour, sifted
Strawberry paste/emulco
PME natural red food coloring

Meringue
7 egg whites
75g sugar
1/4 tsp cream of tartar

1. Preheat oven to 160°C. Prepare a tray of water under the lowest rack for steambaking. *Optional but helps to increase moisture for ogura-like texture.

2. Beat egg yolks with sugar with whisk till pale yellow before stirring in oil, water and vanilla extract.

3. Add in sieved flour and whisk till no trace of flour found. Divide the batter into 4 parts. Leave the first portion plain. To the red portion, add ½ tsp strawberry paste. To the other two pink portions, I added a dip of strawberry paste and used drops of red food coloring to adjust the shade of pink to in between cream and red.

*I used PME natural red coloring but you can also use wilton and other types of food coloring.


4. Meringue: Beat the egg whites with ¼ tsp cream of tartar till firm peaks form or just to the point of reaching stiff peak, mixing in caster sugar in 2 additions.

5. Divide the meringue into 4. Gently but quickly fold in the meringue into the 4 colours batter. You need to work very fast for the meringue not to deflate.

6. Scoop the cream batter using a small teaspoon into bottom right of the base of the chiffon tin. Then repeat with light pink, dark pink, and red batters respectively, diagonally across the tin, to the opposite top left of the base. Repeat another 3 times above the layer till batter is 2 cm from the top of the tin. Gently tap the tin on the counter lightly to remove air bubbles (but do not overdo it).

7. Bake the chiffon cake for 15 min at 160°C and then 140°C for 30 min.

8. Invert the chiffon cake once removed from oven.

9. Unmould the chiffon cake by hand (‘Hand Unmoulding Chiffon Cake for a Clean Finishing’ video tutorial).


I had leftover batter which I used to make 3-4 smaller heart chiffon pops similarly using a silicone hearts mould. Baking time as follows: 10 min at 160°C and then 140°C for 10 min. *Silicone needs lower temperature as it browns more easily than the tins.

Koi Fish (and Firecrackers) Yuzu Chiffon Cake


We’ve heard about ‘Koi’ agar agar, how about ‘Koi’ chiffon cake? The firecrackers are also made from chiffon cake swissrolls! I originally had the inspiration to make these last year and designed them for Deco Chiffon cakes (my 2nd chiffon cookbook), but they taken out last minute in favor of the Baby rooster chiffon cake as this is the year of the Rooster =). 

Nevertheless, I’m thankful I got to try these out when a friend gave me the opportunity to bake these for her this CNY. The flavour requested was Yuzu chiffon cake, one of my favorites! This round, I had increased the yuzu marmalade used for stronger flavour. The same Yuzu chiffon cake recipe is used for both the Koi fishes, as well as 6-inch Yuzu chiffon cake base.

Something different for a change, lovely Koi fishes made from yummy Yuzu chiffon cake!



‘Koi Fish’ Yuzu Chiffon Cake (Makes 6 koi fishes)
2 egg yolks
12g castor sugar
27 g vegetable/corn oil
38g water
40g Prima cake flour
1.25 tbsp yuzu marmalade or honey citron tea
Pinch of salt
Red/yellow natural/gel food colouring

3 egg whites
¼ tsp cream of tartar
25g castor sugar

1. Make yuzu tea by stirring in 1 ¼ tbsp of yuzu marmalade in 38g hot water. Filter the tea to remove the bits. 

2. Preheat oven to 150°C.

3. Beat egg yolks with sugar with whisk till pale yellow before stirring in oil and yuzu tea.

4. Add in sieved flour and salt and whisk till no trace of flour found.

5. Spoon out 3 tsp batter to 2 bowls, add a drop of red or yellow food colouring to each of the two bowls and mix well. *I used PME natural red and yellow food colourings.

6. Meringue: Beat the egg whites with ¼ tsp cream of tartar till firm peaks form or just to the point of reaching stiff peak, mixing in caster sugar in 2 additions.

7. Transfer out approximately 6 tbsp meringue into red and yellow egg yolk batter, leaving the rest for the plain yuzu batter.

8. Gently fold meringue into respective egg yolk batters 1/3 at a time.

9. Spoon a teaspoon of red batter into Koi mold, gently spread randomly, followed by the yellow batter. *You can also omit the yellow batter, using only red.
I got my Koi fish molds from here. Metal molds can also be used or preferred.


10. Fill the rest of the Koi mold with plain yuzu batter, gently tap to remove air bubbles.

11. Bake at 150°C for 10 min, at 140°C for 10-15 min, or until skewer inserted into centre of cake comes out clean.

12. Allow to cool completely on wire rack.

13. Gently unmould by hand by pulling cake from sides before flipping over. For picture tutorials of unmoulding from various molds, you can refer to Deco Chiffon Cakes.

14. Draw on the eyes using melted chocolate, or from cake cut-outs or ready-made ‘eyeballs’ candy (stick on with melted marshmallow).

15. Further use a fruit knife to deepen the grooves or cuts on the body by going over the lines.


The base cake uses the same Yuzu chiffon recipe for a 6-inch (15-cm) tube pan. Very soft and yummy!



Yuzu Chiffon Cake (6-inch chiffon tube pan)
2 egg yolks
12g castor sugar
27 g vegetable/corn oil
38g water
40g Prima cake flour
1.25 tbsp yuzu marmalade or honey citron tea
Pinch of salt

3 egg whites
¼ tsp cream of tartar
30g castor sugar

1. Make yuzu tea by stirring in 1 ¼ tbsp of yuzu marmalade in 38g hot water. Filter the tea to remove the bits.

2. Preheat oven to 160°C.

3. Beat egg yolks with sugar with whisk till pale yellow before stirring in oil and yuzu tea.

4. Add in sieved flour and salt and whisk till no trace of flour found.

5. Meringue: Beat the egg whites with ¼ tsp cream of tartar till firm peaks form or just to the point of reaching stiff peak, mixing in caster sugar in 2 additions.

6. Gently fold meringue into egg yolk batter 1/3 at a time.

7. Fill the chiffon pan leaving 2.5 cm from the top, gently tap to remove air bubbles.

8. Bake at 160°C for 15 min, at 140°C for 20+ min, or until skewer inserted into centre of cake comes out clean.

9. Allow to cool completely on wire rack inverted.

10. Gently unmould by hand (see video tutorial).


‘Firecrackers’ Swissrolls

Using half of the recipe above (i.e. 1 egg yolk, 1.5 egg whites, with added red natural/gel coloring). Bake the batter on an 8-inch square pan lined with baking pan at 160°C for 15 min. Roll up while still warm to prevent cracking.

After the cake has cooled completely, unroll the sheet cake, cut into 1-inch by 1-inch squares and roll up the mini swissrolls. Assemble the mini swissrolls into a firecracker. I used string candy for the centre ‘rope’.


Mini ‘tangerines’

From baking orange chiffon in cake pop molds, shared in Deco Chiffon Cakes book (my 2nd chiffon book) as part of the ‘吉' chiffon cake. Leaves and calynx are cut from sheet cakes.



The chiffon ‘Koi fishes’ and ‘firecrackers’ swissrolls are versatile as cupcakes gifts like the agar agar or as décor on cakes. In their original versions, they were meant as cupcakes! But here’s how I used them to decorate cakes as gifts.

Snowman Chiffon Cake

'Le Petit Prince' Chiffon Cake


This is a chiffon cake for a Little Prince’s full month celebration, based on the story of Le Petit Prince (In French for The Little Prince)!

I was told the important characters are the prince (represented by the crown), a fox, a sheep, a rose and a planet with stars! So is my humble attempt at making a chiffon fox, sheep, rose, planet and crown and putting all the elements together! I was worried it may look weird together but thankfully I think it was pretty nice and dreamy =). 

I used recipe for Reduced egg yolk vanilla chiffon for whiter cake, with 1 layer of batter coloured with pandan and blue pea flowers. 

Reduced Egg-yolk Vanilla Chiffon Cake (9-inch chiffon tin)
2 egg yolks
40g sugar
80g corn/vegetable oil
86 ml water
10 ml vanilla extract
120g prima cake flour
1/4 tsp pandan paste + blue pea flowers extract (35-40 dried flowers in 10g hot water)

Meringue:
8 egg whites
90g sugar
1/4 tsp cream of tartar

1. Preheat oven to 160°C. Prepare a tray of water at the bottom of the oven (I used the lowest rack to bake the cake). *You may omit steam baking; I like to use it to control my oven temperature rise.

2. Beat egg yolks with sugar with whisk till pale yellow before stirring in oil, water and vanilla extract.

3. Add in sieved flour and whisk till no trace of flour found.

4. Spoon out 13 tsp into a new bowl and add 1/4 tsp pandan paste + blue pea flowers extract (or dip of wilton blue gel coloring). Mix well for teal batter.

5. Meringue: Beat the egg whites with ¼ tsp cream of tartar till firm peaks form or just to the point of reaching stiff peak, mixing in caster sugar in 2 additions.

6. Transfer out 26 tbsp for teal batter and gently fold into batter in 2 additions.

7. Fold in the rest of the meringue gently into the cream batter 1/3 at a time.

8. Spoon the cream batter into the chiffon tin till 70% full, then followed by a layer of teal batter.

9. Gently tap the tin on table to remove air bubbles.

10. Bake the chiffon cake for 15 min at 160°C and then at 150°C for 10 mins and 140°C for 20 min, then 130°C for 15 min.

11. Invert immediately once out of the oven to cool

12. Unmould by hand after the cake is cool. Gently pull the cake from the sides of the tin at each angle and push the removable base up to unmould the sides. To unmould the cake from the base, gently lift up the cake from the base using hands, repeating this at each angle before turning the base over (see 'Hand Unmoulding Chiffon Cakes for a Smooth Finishing' video tutorial).


For the planet, I baked plain chiffon cake in a wilton ball cake pan, coloured with blueberry powder and charcoal powder. The wolf is shaped from chiffon cake baked in cake pops molds. The sheep cake pops are now in Deco Chiffon Cakes book, in the first cute cartoon animals chiffon chapter, 'All creatures Great and Small'.

Pumpkin Monster Chiffon Cake


Last year I had the sudden inspiration to dress up my pandan chiffon cake as a 3-eyed monster! This year, the pumpkin version is in Deco Chiffon Cakes!


I love the pumpkin version as it is moist and light! Very different from the pandan chiffon version. This was my demo item at the Kinokuniya book event that just passed. Very touched by the love and those who came, especially the Indonesians who specially flew down!


I also made another simple Monster version. Just some ideas of the endless way we can decorate our chiffon cakes!

Video Tutorial for Passionfruit/Yuzu Lollipop Chiffon Cake Pops


Finally unveiling what I have been working on! My next video tutorial on Passionfruit Lollipop Chiffon Pops from my new cookbook Deco Chiffon Cakes, that's just been launched at all major bookstores in Singapore!

This lollipop chiffon pop is from Pg 94. I'm really not techie so it's really a pain for me to make the video =p, I'm really thankful I had my hubby's help. So hope you don't mind my humble video:


You can substitute passionfruit juice with any of the other fruit juice of your choice. I have tried with yuzu and orange juice and both works well. There is also a natural food coloring guide (how-to-make) from Pg 29. Many people also do not know there are actually some brands like Queen's or PME that sells natural coloring (in some colours). If using wilton gel, then a tiny toothpick prick dip is required only.

6-Asian flavours (Earth Tones) Chiffon Cake


6 Asian flavours in one chiffon cake, naturally coloured by their flavours!

Matcha (light green), Coffee (brown), Soy (cream), Yam (light purple), Charcoal (grey) and Adzuki (light pink, it’s the only colour with some added natural colouring)! The cake is yummy for the Asian palate and there is a flavour for everyone!

Very excited that my latest labour of love, Deco Chiffon Cakes is finally available at all bookstores tomorrow (23 Sep 2016)! There’s a step-by-step pic tutorial for this 6-Asian flavours chiffon cake in the book (Pg 82)!



My first prototype of this cake was the 5-colour 'Inside Out' chiffon cake I made for my birthday using natural colorings my MIL got from Thailand. Very happy that my editor loved the cake too and even put it on the cover of the new cookbook (together with a cute Matcha turtle and flowers pompom chiffon cakes)!
