Here's a new Unicorn Chiffon Cake with Rainbow on top of a Rainbow Chiffon Cake! I've made a number of different Unicorn Chiffon Cakes for my friends. It seems to be forever popular <3.

I tried to make a rag cake but mine comes out with a thin brown layer all around my cake and of course we no longer see the colors.
Does that happen to you too and the cakes you present are scratched before to see the beautiful colors?
I use a silicone mold ... maybe the crust does not adhere to the mold when demolding ??
How do you please? Is what you scratch the crust or is your cakes coming out colored directly?

Hi Magali, try reducing the temperature further, high temperature causes the brown crust formation. You try baking at lower temperature for longer time till fully cooked. For silicone, it's easier to form the crust as compared to metal pans. Metal pans would be preferred. Silicone is possible to be used but maybe you need even lower temperature or greater distance from heat source. Thanks
