Christmas Bear Vanilla Marshmallows with KitKat Surprise Inside

Confection is always better when there's a surprise inside!

These vanilla marshmallow Christmas bears have a yummy surprise inside that complements the marshmallow very well --- a ball of KitKat treat! The richness from the chocolate and light crunch from the wafer layers breaks the monotony of vanilla marshmallow so well!

Vanilla marshmallow ingredients:
10g meringue powder (I use Wilton)*
35g drinking safe water (warm)*
10g caster sugar

100g caster sugar
1/8 tsp salt
25g light corn syrup
30g water
1/2-1 tsp vanilla extract or essence

7g gelatin powder
28g ice cold water

Other ingredients:
Cornstarch or cornstarch mixed with icing sugar (for dusting)
Desiccated coconut (furry bits on hat)
KitKat bites (hidden surprise)
Dark brown coloured mini Crispearls (for eyes & nose)
Ng Chee Lee's red powder food colouring

* You may replace 2g of warm water with lemon juice to temper the sweetness further without having a noticeable lemon flavour. You may replace meringue powder and water with the same weight of fresh egg whites if you prefer.

Christmas Bear Macarons (new decorating technique!)

This is one of those things I wonder why I didn't think of it earlier and why isn't it already mainstream! These charming Christmas bear macarons are actually beginner-friendly although they look impressive because of a simple hack!

This is a kids' baking class material for December that makes use of edible cookie dough for decorating all the details. The macaron bake becomes beginner-friendly because of that, at least for the heads-only version of the bears. I included the full-body version as well for those who would like to challenge themselves. Edible cookie dough is much yummier and contains much less sugar than fondant or royal icing, which have been the mainstream medium for decorating macarons. Some bakers use macaron batter to include all the details to cut out the additional sugar but using something playdoh-ish makes it so much easier but the end product still looks impressive! The cookie dough sticks by itself onto the macaron shell without needing a glue so it's really handy.

See this reel to see what I mean by it being beginner-friendly!

What's on the menu:
- Chocolate macaron shells filled with dark chocolate Nutella filling
- Brown sugar cinnamon macaron shells filled with Biscoff filling
- ALL decorations are made of Strawberry or Vanilla edible cookie dough. No fondant, marzipan or royal icing is used at all so overall sugar load is less!

Blackberry Banana 爸爸 Bear Swiss Rolls

Presenting my simple but yummy blackberry banana 爸爸 bear Swiss rolls for a Father's Day bake!

I didn't know that this flavour combination works until I was given a pouch of blackberry and banana puree from Popote_sg (Instagram account) to try!

Although the line of vegetable and fruit purees is intended for babies, it can be used in dishes, bakes and desserts too! Let me show you how by sharing the recipe for this swiss roll that is pretty quick to put together.

Fruit purees in their natural form are tasty and full of flavour on their own but the flavour gets diluted by all the other ingredients in the bake. So in order to intensify the flavour, the puree needs to be reduced by gently evaporating off a percentage of water in it. I would recommend reducing the puree to about 60-65% its original weight if you have the patience to do it, either by using low heat over the stove, stirring often, or using the microwave oven to heat in 10 second bursts, stirring after each cycle of heating.

Please watch the reel to see the process of making the bears. I reserved about 1.5tbs of batter and added 1/4 tsp charcoal powder to make black batter for the sponge for making the eyes, nose and bow tie. White chocolate chip was used for the snout and inner ears.

Blackberry banana chiffon sponge
Ingredients:
Egg yolk batter
45g reduced blackberry banana puree
30g vegetable oil
54g cake flour, sifted
Pinches of salt
1/2 tsp vanilla extract
3 egg yolks

Meringue
3 egg whites (from large eggs at least 60g with shell on)
1/4 tsp cream of tartar
45-60g caster sugar (depending on taste preference)

Blackberry banana whipped cream
Ingredients:
30g reduced blackberry banana puree
90g whipping cream of choice*

* Use non-dairy whipping cream if dairy is a concern or you need superb stability in hot weather. It's also impossible to overwhip. Use heavy cream (at least 35% fat) for better taste and if you don't have to worry about the heat or dairy issues. Add about 1 tbs of icing sugar if you are using dairy/heavy cream as they are not pre-sweetened like most non-dairy whipping creams. Be careful not to overwhip heavy cream or it will split. You may use a combination of both types of creams if you wish.

Other ingredients for making bear design
1/4 tsp charcoal powder
White chocolate chips

Method
1. Preheat oven to 155C fan/170C. Line the largest baking tray that can fit into your oven with parchment paper or Teflon sheet. If making the bear, prepare a separate small tray (doesn't matter what size it is) and line it.

2. Combine all ingredients for egg yolk batter and whisk until smooth. Set aside

3. Prepare meringue. Beat egg whites with cream of tartar until foamy. Gradually add sugar and whip until firm peaks

4. Quickly but gently fold meringue into yolk batter

5. Pour batter onto prepared tray and spread it thin. Reserve about 1.5 tbs of batter if making bear design. We want to make the swiss roll sponge thin for the stunning spiral effect.

6. Bake for about 9-11 min or until done. Immediately flip it out of the tray onto a fresh sheet of parchment paper. Roll it up to cool completely.

7. If making the bear, add charcoal powder to reserved batter and mix well. Pour onto small prepared tray and bake for 6-7 min. Flip it out onto fresh sheet of parchment paper and cool completely

8. While the cakes are cooling, whip whipping cream of choice until firm or stiff peaks. Fold reduced puree into the whipped cream. Reserve about 1-2tbs of cream as "glue" and store it in a separate bowl in the fridge.

9. Unroll the sponge. Cut a strip of sponge out and reserve it for making the bears' ears if you are making the bears. Apply a thin layer of cream onto the sheet of sponge and roll it up tightly. Freeze for at least 1-2hours

10. In the meantime, cut out all the bear parts using whatever tools you have at home (see reel for reference). It could be fondant cutters, cookie cutters, piping tips or even straws. Store in a covered container if not assembling yet.

11. Cut Swiss roll log into slices. I cut them about 3cm thick. Attach the parts of the bear onto the cut slice of roll using reserved cream. Store in the fridge for up to 5 days if using dairy cream, and up to a week if using non-dairy cream. Store in the freezer in airtight condition for longer storage.

Just to share some photos of the Swiss roll in the making.

Hope you are able to share this with your dad for Father's Day. My dad enjoyed his early present from me!

Christmas Bear with Present Marshmallow Class

This marshmallow creation not only looks good. It tastes great and is suitable as a cute festive gift!

The bears are made of coffee cinnamon vanilla marshmallows with no additional colouring added for the bear. The present is cinnamon vanilla coated chocolate hazelnut cake.

I have online and studio class versions for this. All studio participants get to have access to online class material at no extra charge. This is my first online/studio class introducing meringue powder as egg white replacement for my marshmallow class so some of you may be interested to know. I show you how to adjust the consistency of the marshmallow batter for different applications as well as how to create marshmallow coated cake.

Vanilla Black Tea & Strawberry Valentine's Day Bear Marshmallows

This is a class material for Valentine's Day that I didn't get to share earlier. These cuddly squishy bears have moveable arms that can hug a strawberry marshmallow heart! The bears are naturally coloured and flavoured with black tea.

Watch how the flappy arms work over here:

I made them again recently with shorter body and chubbier cheeks, and packed the strawberry hearts with more freeze dried strawberry powder and less bottled strawberry emulco.

Watch the squish and marshmallow heart piping video over here:

4-Ingredient Gluten-Free Coffee Cashew Butter Bear Cookies

These gluten-free and dairy-free bear cookies are soft, chewy, fragrant and tasty, BUT insanely easy to make!

This is so easy even young kids can help to make the dough! If you don't bother with the bear design, it is also very quick to make these cookies. You only need a mixing bowl, hand whisk and spatula to make the cookie dough. The recipe can be applied to any nut butter. I used the coffee cashew butter from Redman but you may omit the coffee bit and just use any nut butter of choice. The coffee in the nut butter I used isn't too strong and I feel helps to round out the flavour. My kids love it!

Cookie dough
(makes about 22 rounds or 19 bears)
250g (1cup) coffee cashew nut butter
140g brown sugar
1 egg (60-65g with shell on)
1 tsp vanilla extract
1/8 tsp salt (optional)
1/8 tsp caramel essence (optional)

Decoration
White chocolate chips
Mini dark or milk chocolate chips
Black cocoa powder (optional)

Steps:
1. Preheat oven to 180C. Line baking tray with baking paper/mat.

2. Dump everything for the dough into mixing bowl. Lightly beat the egg with a whisk.

3. Mix everything with whisk & switch to spatula when it gets too thick to whisk. Sugar doesn't need to be dissolved but dough should look homogeneous.

4. Set aside for 10min to firm up.

5. Shape into balls of about 20g each. Place on baking tray at least 5cm apart. Flatten the balls of dough. Add ears of about 1g each if desired.

6. Bake for 8-12 min or until edges are lightly browned. Cool on tray.

7. Decorate bear face if desired, with chocolate chips & melted chocolate.

Tips & Notes:
- I used Central Sugars Refinery's "Better Brown low GI sugar" that tastes great but only has a glycemic index of 55 (that's way less than plain flour!)
- Salt & caramel essence are optional but they serve to improve the flavour
- I reshaped the bear heads to be slightly oval but that's optional
- Use a fine zester to smoothen the edges of baked cookies if you wish
- Make sure excess black cocoa powder is dusted off thoroughly or you may stain the cookie if you accidentally drop it on the bear.

You may refer to my Instagram reel for the tutorial of shaping and decorating the bear face. You may choose to decorate it any way you want or leave it undecorated too!
