Longer resting times are usually required if that is the case. If you are using Italian method, this shouldn't be too much of an issue. Simply wait until the surface of the shells are really dry to touch before sending to oven.Phay Shinghttps://www.blogger.com/profile/05605174072497751030noreply@blogger.comtag:blogger.com,1999:blog-4001189483359117348.post-36333328249004358652017-05-29T15:45:21.048-07:002017-05-29T15:45:21.048-07:00I suspect I "disturbed" the batter too m...I suspect I "disturbed" the batter too much when I used the tooth pick to shape them into ovals for Pedro. Do u think that's the reason? Cos I piped some straightforward round ones with leftover batter and those were ok.Erinhttps://www.blogger.com/profile/07934257511310857039noreply@blogger.comtag:blogger.com,1999:blog-4001189483359117348.post-645033504445981022017-05-28T00:55:28.539-07:002017-05-28T00:55:28.539-07:00Hi Erin,

Although adding cocoa and tea powders, or even dessicated coconut etc may affect the consistency and texture of the macarons, I doubt they will cause much problems if they are well sifted and mixed thoroughly with almond and icing sugar before macaronage.Phay Shinghttps://www.blogger.com/profile/05605174072497751030noreply@blogger.comtag:blogger.com,1999:blog-4001189483359117348.post-89898959432697519352017-05-26T04:30:15.211-07:002017-05-26T04:30:15.211-07:00Hi Phay Shing, I tried to make Pedro macs by addin...Hi Phay Shing, I tried to make Pedro macs by adding instant coffee powder but they cracked and rose unevenly when baking. My peppa macs were good (coloured with pink gel). The only difference in the 2 macs was just the addition of coffee for Pedro. I use the French meringue method. Is coffee powder the culprit here? Would appreciate if you could enlighten me! Thanks!Erinhttps://www.blogger.com/profile/07934257511310857039noreply@blogger.comtag:blogger.com,1999:blog-4001189483359117348.post-90887595781922287272015-03-25T22:55:06.561-07:002015-03-25T22:55:06.561-07:00Could you email us instead?
