Matcha and cocoa powders can make it tricky to work with as they affect the consistency of the batter and for the case of cocoa, it deflates the meringue faster due to the fat content present. You may try replacing some of the almond flour with the powders you are using and sift together with icing sugar. Make sure the meringue is stable. I hope this helps!Phay Shinghttps://www.blogger.com/profile/05605174072497751030noreply@blogger.comtag:blogger.com,1999:blog-4001189483359117348.post-23813891994776085972023-10-28T00:41:23.761-07:002023-10-28T00:41:23.761-07:00Hi would want to try this since I've been gett...Hi would want to try this since I've been getting sweet macaron shells. You can try using mochiko if you already have in your pantry as I am a practical baker and don't recommend homebakers to have a huge variety of flours kept at home if they don't use it often or for other purposes. I know of another homebaker who made glutinous rice flour based macarons before so you can give it a try. I think brands don't really matter, just the type of flour 😊. Over here cornflour is the fine white powder used as a thickener in soups and stews and anti-caking agent in powdered sugar, and not the yellow coloured flour. It doesn't taste of corn. Perhaps where you are, it is cornstarch that you should be using. All features were done using macaron batter. Just let the shell dry thoroughly before baking and it shouldn't crack :). Batter that has been manipulated with toothpick will tend to take longer to dry so do be patient.Phay Shinghttps://www.blogger.com/profile/05605174072497751030noreply@blogger.comtag:blogger.com,1999:blog-4001189483359117348.post-57445863796488090652017-06-04T01:47:44.942-07:002017-06-04T01:47:44.942-07:00Hello Phay Shing. Being too lazy to make a tiny bit of royal icing, I coloured a bit of batter orange and black for the chick's features and used a toothpick to apply them. Sadly they're cracking and misshapen while the plain ones without any features, meant for the bottom, are so far looking fine. Have you tried using batter for the features and finding the macarons crack or become misshapen? Possibly overstirring that bit of batter?Anonymoushttps://www.blogger.com/profile/15955764094549240196noreply@blogger.com
